Let's see, recipes... Gino', Tudor's, Subway, and a new recipe to open tomorrow at 11am on Main Street in Clay. "The Kitchen." Anyone know Greta Brown? She's the chief cook and recipe person. Spent all day today making desserts and stuff for tomorrow. Can't wait to try Greta's recipes. If you know her, then you know she is great in the kitchen. Yum Yum.

Here's a yummy one that I found a few years back and use every time I make mashed potatoes. It's extremely simple and they're so good that you can't sit still to eat 'em. LOL
The Best Mashed Potatoes EVER
10 or 12 medium potatoes-cooked, drained and mashed
8 ounces sour cream
8 ounces cream cheese
1 stick margarine
Beat all ingredients together and refrigerate overnight to allow flavors to blend. Reheat in oven or microwave when ready to serve.
Isn't "snarl" onomatopoeia, SB? hehehe :P
Christmas Cheese Balls
16 ounces cream cheese, softened
1 20-ounce can crushed pineapple, drained
14-ounce jar maraschino cherries, chopped
1 green bell pepper, chopped
1 small onion, finely chopped
1 cup finely chopped pecans
Combine cream cheese, pineapple, cherries, green pepper and onion in bowl; mix well. Chill in refrigerator. Shape into 2 balls. Roll in pecans to coat.
Throw at Southern Boy. lol

Baked Pork Roast
(poor man's)
1 Fattened possum (dressed whole with head attached. Place whole Golden Delicious apple in mouth
2 29 oz.cans of Roundys Yams
2 15 oz. cans Sauerkraut(drained)
1 Viadelia onion quartered
Bake possum 1hour at 350 degree oven (save drippin's) and turn often and apply coating of butter and brown sugar often until it is golden brown and tender.
Place possum in a large baking pan (turkey tray) also baking bag like the kind you use for turkey also. Place sweet taters (yams)around possum and cover possum with sauerkraut and then pour drippins over entire ingredients then heat for 35 minutes at 350 degree oven. Use some of the drippin's and add 1 pot of Black Coffee and bring to a boil for 2 to 4 minutes (red eye gravy) Serve with hot baked Biscuits and call your lady friends as its guaranteed to add PiZaZZZZZZZZZ to ur diet.. Your tongue will slap your brains out and sitting still is impossible with this meal while trying to eat.
Here's another of my favorites should anyone be interested in trying it out. It's heavenly. :)
No-Bake Chocolate Truffle Pie
Crust:
1/2 cup pecan pieces, toasted and coarsely chopped
1 (6 ounce) ready-to-fill chocolate flavored crumb crust
Caramel Layer:
3/4 cup (5 ounces) individually wrapped caramels (17 squares), unwrapped
1/4 cup canned evaporated milk (not condensed)
Truffle Layer:
1 1/2 cups (9 ounce) semisweet chocolate chips
1 cup heavy whipping cream
3 Tablespoons stick butter
Garnish:
Sweetened whipping cream
Sprinkle pecans on crust.
Caramel layer: heat caramels and evaporated milk in heavy saucepan over low heat or in a bowl in mmicrowave, stirring often until caramels melt and mixture is smooth. Pour over pecans.
Truffle Layer: heat chocolate chips, cream and butter in a heavy saucepan over low heat or in a bowl in microwave, stirring until chocolate melts and mixture is smooth. Pour over caramel layer and refrigerate about 4 hours until set.
To serve, pipe or spoon on whipped cream.

I'm going to try the potato recipe.Thanks! I have a hard time getting those to come out right with just milk and butter. Not as bad as my sister though who made some potatoes and gravy to go with some fried chicken once. The gravy was way thicker than the potatoes were. That was so wrong!

Yes, the truffle pie is really sweet and oh-so-goood. It's something that ya' have to enjoy in small portions, but that just makes it last longer. LOL
You'll not regret trying the mashed potato recipe. I could live off of mashed potatoes alone and that honestly is the best recipe that I've ever found. They're GREAT with some homemade gravy over them, too. The cream cheese and sour cream makes the mashed potatoes the perfect consistency and adds a little extra "kick" to them, without really changing the flavor. It also makes them really white and fluffy. You'll have "pretty" mashed potatoes. LOL
I'll never forget when I was trying to learn to make gravy...on my own. LOL Every time, I'd end up with gravy that you could slice until my step-brother stepped in and showed me the proper (and easy) way to make it. haha
Easy Chicken Cassarole
1 box of Stove Top stuffing mix fixed according to directions on box only using 1 cup of water.
2 cans of cooked chicken
1 can of cream of mushroom soup
1 can of cream of chicken soup.
Mix all ingred. and pop in microwave for 20 minutes.
If you don't like mushrooms just replace with another can of cream of chicken soup.

I'm in a recipe sharing mood today. Here's another. This is exactly like warm pumpkin pie without the crust. :)
Slow Cooker Pumpkin Pie Pudding
15 ounce can solid pack pumpkin
12 ounce can evaporated milk
3/4 cup sugar
1/2 cup buttermilk baking mix
2 eggs, beaten
2 Tablespoons melted butter or margarine
1 Tablespoons pumpkin pie spice
2 teaspoons vanilla
whipped cream
Mix together all ingredients except whipped. Pour into greased slow cooker. Cover and cook on Low 6-7 hours, or until thermometer reads 160 degrees. Serve in bowls topped with whipped cream.
I've made a homemade version of the chicken casserole before, using chicken breast strips that I'd browned in a skillet and buttered bread crumbs in the place of the stuffing. I'd bake it in the oven at 350 until the bread crumbs were nice and brown. It used to be a family favorite, but I haven't fixed it in a good while. Maybe I'll do that over the weekend and try out this easier recipe. LOL
Simple Cornbread
1 cup yellow cornmeal
1 cup flour
1/4 granulated sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
1 cup milk
1/4 cup cooking oil
Mix all ingredients until well blended. Pour into greased 8 x 8 square pan. Bake at 425 degrees for 20 minutes or until a light golden color. Knife inserted in center will come out clean.

I've still got ramps in my freezer from ... 3 years ago? It was an experiment to see how long vacuum packing would keep stuff fresh. Unfortunately, even after 3 years, they're still fresh & green & crisp-looking. Bring on the taters & eggs, I reckon!
If you want something new for chicken: Put it in a skillet with water and bake until 1/2 done. Then add a bottle of Italian Dressing and finishing baking. It makes a wonderful sweet/sour chicken.

Here's a few more recipes for anyone that's interested. (All of the ones I've posted are ones that I've actually tried and used more than once....so I know they're good. LOL) Seems like I have an awful lot of "sweet" recipes. :P

Smoked Turkey Jarlsberg Salad
1-1/2 lb. smoked turkey breast, cut into 1x1/4-inch strips (5 cups)
8 oz. Jarlsberg or Swiss cheese, cut into 1x1-1/4-inch strips (2 cups)
2 cups seedless red grapes, whole or cut in half
1-1/2 cups slivered almonds, toasted
2/3 cup mayonnaise
2/3 cup sour cream
2-4 Tbsp. milk
Salt & pepper to taste, if desired
Lettuce, if desired
Mix turkey, cheese, grapes and almonds in a very large bowl. Mix remaining ingredients except lettuce in a medium bowl. Pour over turkey mixture; mix gently. Cover and refrigerate until serving. Serve on lettuce.
Makes 8 servings

Cherry Cobbler Muffins
Ingredients:
2 cups biscuit mix
1/4 cup granulated sugar
1 egg
2/3 cup milk
1/2 can cherry pie filling
2 Tbsp of oil.
For topping:
1/4 cup all purpose flour
1/4 cup packed brown sugar
2 Tbsp melted butter
1/4 Tbsp cinnamon
Instructions:
In a bowl, mix together first 4 ingredients.
Add most of the pie filling (leaving enough to top each muffin with three cherries).
Fill lined muffin cups 1/2 to 2/3 full. Top with three cherries.
In a bowl, mix together topping ingredients until they hold together when squeezed in fist.
Sprinkle crumbs of streusel on top of unbaked muffins.
Bake in a 375 degree pre-heated oven for 22-25 minutes.

ITALIAN CREAM CAKE
1 stick butter or margarine 1/2 cup oil
2 cups sugar 1 teaspoon soda
5 egg yolks 2 cups plain flour
1 cup buttermilk 1 teaspoon vanilla
1 small can coconut 1 cup pecans, chopped
5 egg whites, stiffly beaten
Cream margarine (or butter) and oil, add sugar beating until mixture is smooth. Add egg yolks, beat well.
Combine soda and flour, add to creamed mixture,
alternately with buttermilk, stir in vanilla, coconut, and pecans, fold in beaten egg whites.
Pour into 3 greased and floured cake pans. Bake at 350 degrees for 25 to 30 minutes or until toothpick comes out clean.
Frost with cream cheese frosting.
Frosting:
2 - 8 ounce cream cheese, softened
1 cup margarine or butter, room temperature
2 - 14 ounce boxes confectioners sugar
2 teaspoons vanilla
1 cup pecans, chopped
Combine cream cheese and margarine (or butter), cream until smooth. Add confectioners sugar, beating with an electric mixer until light and fluffy. Stir in vanilla. Frost cake and sprinkle with pecans on sides and top.

8 oz. cream cheese, softened
1 lg. can chili, with beans
1/2 cup salsa
2 teaspoons taco seasoning
1 - 2 cups shredded Mexican cheese
Spread cream cheese evenly on the bottom of a 9x13 baking dish. Mix chili, salsa & taco seasoning well & spread evenly over cheese. Top with shredded cheese. Bake at 350 for 15 minutes or until hot. Enjoy with Fritos or tortillas.

Sparkle Punch
1 48-ounce can apple juice, chilled
1 48-ounce can orange juice, chilled
1 envelope unsweetened lemonade mix
1 cup sugar
2 liters ginger ale, chilled
2 liters lemon-lime soda, chilled
Combine apple juice, orange juice, lemonade mix and sugar in puch bowl; stir until sugar is dissolved. Add ginger ale and lemon-lime soda. Garnish with fruited ice ring.
Approx Per Serving: Cal 172; Prot 1g; Carbs 44g; Fiber 1g; T Fat 1g Chol 0 mg; Sod 20mg. **

Here's a favorite with my kids:
1 can Sprite
1 splash orange juice
1 shot grenadine
Pour the Sprite into an ice-filled glass, splash in the OJ, splash in the grenadine, enjoy!
Hint: Adding a healthy shot of rum and/or tequila will make you sing Jimmy Buffet songs better than The Great One himself.
